Beef Pot Roast – Slow Cooker

This is an old-fashioned beef pot roast with vegetables and gravy. Feel free to add other vegetables to this pot roast, such as small white onions, parsnips, or sweet potato chunks.

Ingredients:

  • 1 chuck pot roast, tender chuck, chuck arm, etc., 3 to 4 pounds
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • dash leaf thyme
  • 2 bay leafs
  • dash garlic powder
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 cups beef broth
  • 5 to 6 medium potatoes, peeled, quartered (about 1 1/4 pounds)
  • 1 cup carrots (peeled and cut in ¾” length.
  • 2 medium yellow onion, cut in chunks
  • 1/2 cup beef broth
  • 3 tablespoons all-purpose flour
  • 3 to 4 tablespoons cold water

Preparation:

In a food storage bag, toss pot roast with 1/4 cup flour, 1/2 teaspoon of salt, 1/2 teaspoon of onion powder, a dash of thyme, and a dash of garlic powder. Heat oil in a large covered Dutch oven; add the pot roast and brown about 15 to 20 minutes on all sides. Add beef broth and bring to a simmer. Reduce heat to low, cover, and simmer for 2 1/2 hours. Add 1/2 cup red wine or beef broth, along with the vegetables. Cover and simmer for 45 minutes longer, or until vegetables are tender. Strain juices into a saucepan and bring to a boil; reduce heat to a simmer. Simmer for 5 minutes. Combine 3 tablespoons flour with 3 to 4 tablespoons water and whisk to make a smooth mixture. Stir into the simmering broth, a little at a time, until thickened as desired.

 Alternatively, place browned roast in Dutch oven in the oven set at lowest temperature setting.

Arrange sliced pot roast and vegetables on a platter. Drizzle some of the gravy over the sliced beef or serve gravy on the side.
Serves 6.

PAN-BROILED VENISON CHOPS

5             venison loin chops, cut ½ – ¾-inch thick

               (weight approximately 1 ¾ lbs.

1¼          teaspoons salt  - Dash pepper

 ¼           cup butter or margarine.

¼            cup hot water

Wipe chops clean with a damp cloth.  Trim off any strong-smelling fat.  Then sprinkle with salt and pepper.  Heat butter in skillet.  Brown chops slowly on both sides, then lower heat and cook 5 minutes on one side.  Turn and cook on the other side for 5 minutes.   Remove to a hot platter, and cover to keep hot.  Add the hot water and thoroughly scrape loose all brown residue from bottom of pan; heat to boiling and pour over the meat or into a separate hot  gravy boat.  Serve promptly.  4 to 5  servings.

BARBCUED VENISON TENERLOIN

1 deer tenderloin (1 ¼ lb.)
2 tablespoons butter or shortening

Barbecue Sauce:
1 cup ketchup ½ cup water
2 teaspoons vinegar ½ cup chopped celery
2 tablespoons grated onion 1 ½ teaspoons salt
¼ to 1/2 teaspoon Worcestershire, as desired

Cut tenderloin into slices 1 3/4 inch thick (about 6). Trim off any strong fat or tough membrane.  Heat butter in a skillet and brown slices of deer quickly.  Meanwhile, comine remaining ingredeients and pour over hot meat.  Place uncovered in a moderate oven (350 F)  for 1 hour.  Baste meat occasionally with the barbecue sauce and turn once during the baking.  6 servings.
