As you might be aware, two of the TamPogo co-founders, Jeff Conrady and Dave Zinn are in Latin America on a mission with Feed My Starving Children. ICES AND SHERBETS

There is nothing in the summer like ices, sherbets, ice creams etc. for the young and the young at heart. When I was young my mother was always the first to want to go get ice cream or to make ice cream. I suspect it had more to do with her love of ices etc., than her desire that her children experience the taste of these yummy summer treats.

I remember one time shortly after the birth of my youngest son, and my mother presented me with a brand new electric ice cream freezer for the occasion of my birthday. She sat there and visited with me and then told me that she was going to be entertaining her lady friends and she should have purchased two; in order that she have one also. Oh well she said; she really did not use one very often and there was no reason for her to purchase two of them. Maybe I would loan her mine and she would use it, return it, after her little party. That way she would not have to purchase one for herself; when she was after all only going to use it the one time. I ate ice cream in her home on many occasions after that. My birthday present was never seen in my home again; however, we have purchased and enjoyed many other ice cream freezers.

My daughter recently visited from out of town with a car full of teenagers. The made frequent trips down to the local country store for shaved ices. Plus, we all enjoyed ice cream. For us, frozen desserts is a family tradition.

My father-in-law wrote many commercial ice cream recipes over his lengthy history in the business. Many of his original ice cream recipes are used to this day by major manufacturers of ice cream.

BLACK RASPBERRY ICE

2 teaspoons plane gelatin
¼ cup lemon juice
¾ cup cold water
½ teaspoon grated lemon rind
¾ cup sugar
Pinch of salt
1 2/3 cups concentrated black raspberry juice
2 egg whites (If you use the yolks the color of the ice will not be as attractive. Not a good idea.)

Sprinkle the gelatin over ¼ cup of the water and let stand 5 minutes to soften. Combine the remaining water with ½ cup of the sugar and heat just to boiling. Add the softened gelatin and stir until completely dissolved. Cool. Add the fruit juices and lemon rind. Pour quickly into clean can of ice cream freezer and freeze according to directions that come with freezer, until almost firm. Add the salt to the egg whites and beat until stiff. Add the remaining ¼ cup sugar gradually and beat until thick and smooth. Add to mixture in freezer and continue according to directions that came with your freezer. Makes about 1 ½ quarts.

CRANBERRY APPLE MILK SHERBET
½ pound cranberries (about 2cups)
1 cup sugar
1 cup water
¼ cup orange juice
2/3 cup whipping cream
1 cup thick, tart applesauce

Wash and pick over cranberries, add water and cook in covered pan until soft; put though sieve, cooking water and all, discarding skins. Combine cranberry purée with applesauce, sugar and orange juice. Beat chilled cream until very stiff. Fold into cold fruit mixture thoroughly but lightly and freeze in a mechanical refrigerator or in hand-turned freezer according to directions. (if frozen in hand-turned freezer, cream need not be whipped.) 5 servings.

CREAMY LEMON SHERBET
2 teaspoons plain gelatin
2 tablespoons cold water
1 ½ cups sugar
¼ teaspoon salt
2 ½ cups milk, scalded
2/3 cup strained lemon juice
¼ teaspoon grated lemon rind, packed firmly
1 cup whipping cream

Soften gelatin in cold water for 5 minutes. Add sugar, salt and softened gelatin to the hot milk and stir until dissolved; cool. Add lemon juice and rind and pour into a freezing tray of the refrigerator, and freeze to an ice mush. Stir and fold in stiffly beaten cream. Return to refrigerator and freeze until firm. 8 servings.

If hand turned freezer is used, omit gelatin an cold water. Combine all ingredients but the lemon juice and freeze to a mush. The add lemon juice and freeze until firm according to directions the come with your freezer.

VANILLA ICE CREAM NO. 1 & 2

VANILLA ICE CREAM NO. 1

1 cup milk
2 eggs
1 tablespoon cornstarch
2 cups coffee cream
½ cup sugar
2 teaspoons vanilla
¼ teaspoon Salt

Scald milk in top of double boiler; combine thoroughly with cornstarch, sugar and salt which have been mixed together. Cook over direct heat, stirring constantly until thick and smooth. Beat eggs slightly; add small amount of hot mixture, beat slightly, then combine with remaining hot mixture, continue to stir for one minute. Strain and cool. Add cream, and vanilla. Turn into freezer can and freeze according to directions. That came with freezer.

VANILLA ICE CREAM NO. 2

4 eggs
4 cups cream (1 quart)
2 ½ cups sugar
1 ½ tablespoons vanilla
6 cups milk (1 ½ quarts)
½ teaspoon salt

Beat the eggs until light and fluffy and add sugar gradually, beating well after each ¼ cup addition. When the mixture becomes stiff and difficult to beat, add milk, cream vanilla, and salt and mix thoroughly before pouring into a gallon freezer. Freeze according to directions that came with ice cream freezer. Makes 1 gallon

Frozen Desserts

Ice cream and its frozen relatives are among the most popular desserts which grace the American table, and are probably the most typically American of all foods with the possible exception of pie.

It is difficult to classify frozen desserts because there is very little uniformity in the ingredients used in products called by the various names, however, a general classification that will help to differentiate between the various desserts is as follow:

Ice Cream: Plain or Philadelphia ice cream is a mixture of thin cream, a sweetener and flavorings that is stirred while frozen and may or may not have some type of binder added, such as gelatin, eggs, etc.
New York or French ice cream has enough egg yolks added to give the ice cream a definite yellow color.

Custard ice cream has a base of whole egg and milk that may be cooked or uncooked.

Regular ice cream contains either flour, cornstarch or gelatin as the thickening and may contain egg in a smaller proportion than the New York type.

Unstirred ice cream (made in the mechanical refrigerator) usually contains richer cream and a relatively large amount of some binder or stabilizer.

Ices: An ice consists of sweetened fruit juice or purée that is usually diluted with water and may contain beaten egg white.

Sherbets: A sherbet is sweetened fruit juice or purée that is usually diluted with milk instead of water and may contain beaten egg white.

Mousse: A mousse contains sweetened, flavored whipped cream that is molded and frozen without stirring.

Frappe: A Frappe is the same as an ice except that it is frozen only to a mush.

Frozen desserts are simply frozen liquids with various substances added for flavor, texture, and color. As water freezes, it becomes a solid hard block of ice that is too hard to spoon into. If the water is stirred as it is frozen, it will have a milky appearance due to the tiny air bubbles that are frozen into its interior and a slightly less solid consistency, although it will still be too hard to be spooned out. The addition of sugar lowers the freezing point of the water sufficiently that the frozen mass will not be solid and will be the consistency of the frozen dessert know as an ice. In fact, the true ice is simply a sweetened fruit juice that is diluted with water and frozen with continual stirring.

The ice crystals in an ice are still fairly large, and on standing these crystals grow to form still larger ones. If particles of fat (as in milk or cream), or egg (either white or yolk or both), gelatin or starch (flour or cornstarch) is added to the mixture, these particles keep the frozen dessert creamy and smooth-textured and give it enough body so that it does not thaw immediately when taken from the freezer. All of these added ingredients are known as binders, stabilizers or interfering substances. They also add viscosity to the original liquid and make it possible to beat more air into the mixture, which gives a lighter, fluffier dessert, a creamier texture and a greater volume. This usually makes a very rich dessert. This increases the volume known as overrun.

Very satisfactory desserts can be made without stirring, but the proportion of interfering substances must necessarily be high. This usually makes a very rich dessert. If too rich a cream is added, the consistency has an unpleasant cloying tendency that is not enjoyable, so it is better to use a cream of medium fat content and to add other substances such as eggs or gelatin.

The ingredients added to frozen desserts must always be of the highest quality. Freezing will never improve the flavor of a rancid nut, or overripe pieces of fruit, or old milk and cream. It is poor economy to spoil the flavor of a whole freezer of ice cream by trying to salvage a cup of overripe berries.

ICE CREAMS
Directions for Freezing Ice Cream
About 5 lb. (4 qt.) of chipped ice and 1 – 1/3 cups coarse salt will be needed for freezing ice cream in a 2-quart freezer that much additional salt and ice will be needed if the ice cream is to be packed in the freezer to ripen. This portion is about 12 cups finely chopped ice to each cup of coarse salt.

Pour boiling water over the cream can and the beater of the freezer; drain and set aside to cool.

Any mixture should be thoroughly chilled before it is poured into cream can for freezing. Fit the dasher and can into place before pouring in the chilled ice cream mixture. Pour in ice cream mixture, then fit lid and crank into place. If the parts are fitted together correctly, the crank will turn freely and the dasher as well as the can will resolve when crank is turned. Pack a layer of ice and a layer of salt around can, packing down firmly with a wooden spoon. Turn crank several times during packing so ice doesn’t pack to hard. Continue layers of ice and salt turning crank occasionally until ice chamber over the top of cream can is filled. Turn the crank slowly (about 40 revolutions per minute.) for the first three minutes, and then turn rapidly until it is very difficult to turn. For best results the turning must be continuous.

When the cream is frozen, clear away the salt and ice to about 1 inch below the lid of the cream can. Wipe the lid carefully to remove all ice and salt, take the lid off. Take out the beater and crape clean. The cream may be transferred to freezing tray of mechanical refrigerator or left in the cream can to “ripen” for a few hours before serving. If left in the can, push ice cream gently down into can, replace the lid and fit it with a cork or pack cover to keep brine from seeping in. Drain the water from the ice chamber. Repack paper and damp cloth and put in a cool place to ripen, not longer than 2 or 3 hours. If packed in refrigerator trays, pack down gently and cover with a sheet or two of heavy waxed paper. Return quickly to freezing compartment to ripen.

Bull Riding, with its $500 added money nightly, is the main event at the Enterprise Rodeo along with Calf Roping which features a 3-night Tyrel Terry Memorial All-around Buckle, Barrel Racing and Team Roping.

Each night is a separate performance with its own payout and features all of the events listed below along with two specialty events and a clown act by Jared the Clown.

Enterprise Rodeo History!

Since Enterprise’s founding in 1896 there has always been a Pioneer Day celebration with the first rodeo likely being held around 1908, (although no one remembers for sure). Those first rodeos were put on by the LDS church and held were the Enterprise Elementary School is now located. They were later relocated to the church square where a small grand stand was built, although most people sat in their cars around the arena. One rodeo, brothers Gordon and Ken Lytle both were roping calves. First it was one brother’s turn to go, he jumped off his horse, after roping the calf, stepped on his leg wrong and broke it. A few runs later the other brother ropes his calf, jumps off his horse and breaks his leg also.

Bill Hunt and The Black Eyed Bull

In 1939 the Gunlock cowboys who furnished the stock each year and still do, let the word out that they had a special bull that year for the Hunt boys to try their luck at riding. This bull was big, mean, and wild. He had never been ridden and was called “The Black Eyed Bull”. On the first day of the rodeo, Dick Snow from Pinto and Darwin Slack from Hurricane each had a chance at riding him. It took only a few seconds before they each went rolling in the dirt. On the second day it was Bill Hunt’s turn to ride. He was anxious and ready. At the nod Lee Holt swung the gate open and this mighty black eyed bull jumped high and long with a hard twist to the right, back straight on, then to the right and back to the left. Bill was way off to the right when the bull jumped high enough and with enough power to throw Bill up in the air about a foot and right back sitting dead center again. When the buzzer went off all you could hear was the roar of the crowd.

American Legion Post 80 Takes Over Rodeo

The rodeo remained at the church square until 1946 when the American Legion Post 80 was organized and asked to “take over the rodeo and move it out of town”. Moe Palmer was the Legion Commander at the time. The Legion bought 80 acres from Ivor Clove for $3,000 at the present day location, voted Stan Adams Rodeo Chairman, and started building the rodeo grounds. Winsor Adams, Sher Adams, Moe Palmer, Heber Staheli, and Kent Simkins were some of the main workers. Ted Twitchell and Voi Sorenson did all the welding, Bart Manthey built the announcer’s stand for a case of beer. Stan Adams, known as the hardest worker in the county, did a lot of work but made everyone mad in the process. One day while working on the grounds Kent Simkins went to get a drink of water out of a jug that was wrapped in a wet cloth to keep it cold, took a big swig, found out it was beer and spit it everywhere. Moe Palmer said “Kent you could have at least spit it back in the jug.”

After a lot of very hard work a small grand stand, announcer’s stand, bucking chutes, corrals, and arena were built which had to be rebuilt year after year. Wayne Holt and Tony Melissa did the entry fees and books. Lerald Peterson and Lee Holt ran the roping chute and barrier. Rod Leavitt took care of the calf riding for the kids. Truman Bowler announced and tickets were sold for $1 each. A special event was the Cow Hide Race which “felt like you were going 150 mph with that gravel under the cow hide”.

Weldon Day’s Glass Eye

Bucking Horses were the main event in those days along with Wild Cow Milking which was done with big, hard to handle cattle. One rodeo Weldon Day and Sher Adams were doing the Wild Cow Milking and Weldon Day lost his glass eye in the arena. The rodeo was stopped while everyone looked for his glass eye. Luckily they found it.

Bucking Horses

For the bucking horses Bill Hunt and Clint Bowler each gave the Legion a bucking horse, some were bought at the auction and Bob Bowler roped mustangs to buck out which was legal until 1974. The Legion then made a deal with Sher Adams to feed and care for the bucking horses in trade for 40 of the 80 acres that the Legion owned.

Staheli Bob the Bucking Horse

In the 1960s a bronc known as Staheli Bob, owned by Heber Staheli, became a living legend in Enterprise, the most fearsome bucking horse in the region. He even won $50.00 from the St. George Lions Club for being the best bucking horse. Staheli Bob reappeared in the bucking chutes year after year, like a recurring nightmare in a horror film. Staheli Bob was bucked out for many years without being rode, sometimes up to 5 times per night and he was always first to start the rodeo off with a bang.

The Year 1971

Bareback riders in 1971 included Wayne Platt, Ron Gardner, Rick Bracken, and Terril Hunt. Bull riders included Leon Platt, Ron Gardner, Terril Hunt, Rick Bracken, Kalvin Bowler, Doyle Atkin, Dwight Dannelly, and Carl Bowler. Other events were Junior and Senior Calf Roping, Team Roping, Junior and Senior Barrel Racing, and Wild Cow Milking.

Through the 80s

As some of the early Enterprise cowboys began to “wear out” more responsible was placed on the younger generations. Phil Norton, Steve Staheli, Roger Randall, Dwight Dannelly, Jeff Adams, Cletus Adams, Marlo Reber, Tam Staheli, and Julie Hunt were some of the most prominent names with them being responsible for many of the improvements that we see today.

1999 through 2008

In 1999 Diamond G Rodeos, Inc was hired for the rough stock events. This was a big change from the range bulls, that had been used since the rodeos began, to professionally bred bucking bulls and horses. The year 2000 would bring about covered bleachers and a wonderful clown named Jared Stores, who is still going strong after 10 years at the Enterprise Rodeos. In 2004 Enterprise lost a great cowboy, 18 year old Tyrel Terry, and since that time a 3-night All-around Calf Roping buckle has been awarded in his memory. $500 added money in the bull riding began in 2005 and proves to bring numerous bull riders from many states to Enterprise, Utah. In 2007 Dixie College donated the football bleachers they were updating to the Legion. This was able to double the seating capacity which was greatly needed with the rodeos growing larger and larger each year. Fast Cash Rodeos also took over the rough stock although bucking horses seamed to becoming a thing of the past with only one or two bareback and bronc riders per night. By 2008 the bucking horses would be dropped altogether.

Rodeo Staff and Volunteers Today

For the past 10 years the rodeo staff and volunteers have remained virtually the same with over 65 volunteers a night needed to make the Enterprise Rodeo a success and many others doing work prior to and after the rodeos. Rydel Reber has headed this up as Rodeo Chairman since the year 2000 with Raquel Randall as Rodeo Secretary since 1995. Others who have been very influential over the past decade and beyond include Marlo Reber, Ranon Reber, Mike Randall, and Mike Cobb. Arena help has included Ross Farnsworth, Randy Terry, Blane Farnsworth, Larry Staheli and Sons, Clayton Holt, and Jerald Hunt. Arlan Simkins has taken tickets, Calvin Bowler announced, and Mary Hunt and LaNeta Chadburn have been office help. There are a great number of others who help each year and the rodeo would not be a success without them.
